Single Cask Nation Ben Nevis Single Malt Scotch Whisky 20 year old
This cask bottling, distilled in November 1996, spent twenty years maturing in a refill oloroso sherry puncheon. Color: Polished brass. Nose: Has a terrific weight to it with green and yellow wine gums, warm sugar cookies, candied nuts, creme brûlée, spun sugar, and a hint of pine. Palate: Complex and multi-layered given the experience begins with slightly medicinal notes but then moves quickly to flavors of Parma Violets, Medjool dates, hint of cocoa and coffee beans, Filberts, cookies and cream. Finish: Long and warming with a rich sweetness (chocolate truffles), vanilla wafers, molasses cookies, and dark wood. On the label: A complex, multi-layered whisky with great weight that opens on candied nuts and spun sugar before becoming dense and fruity mid-palate with dark cocoa/coffee notes that finishes with a rich sweetness.

Chateau L'Etoile Chardonnay 2014Beautiful Chardonnay in a traditional oxidative style. Gorgeous minerality with a distinct nuttiness. Etoile is the appellation, as well as the name of the chateau. (The name comes from the star shaped fossils in the soil.) Like some other Jura whites it can be aged without topping up the barrels, giving the classic nuttiness. It remains fresh and light, and utterly distinctive. Try it with chicken in cream sauce or Persian royal rice and you'll thank us forever.
Double Canyon Cabernet Sauvignon 2015This Cabernet embodies an enticing array of ripe red fruit, intermixed with notes of graham cracker, allspice and dried tobacco. The addition of Syrah lends a full and rich texture on the mid-palate, further accented by bright acidity from the Petit Verdot, sweet red fruit from the Merlot and luscious raspberry notes supplied by the Malbec. The soft and supple mouthfeel is supported by sweet oak tannins and fresh fruit character, fi nishing with a juicy acidity that is characteristic of Horse Heaven Hills.

The palate is bright and dynamic with a sinuous texture and racy acidity. Flavors of cranberry, sassafras and a touch of clove combine for a wine with an incredible spectrum of flavors and subtlety.
Laurent Perrachon Roches Bleue Julienas 2015This vigourous wine has an intense ruby hue. Produced on a clay soil, its bouquet is dominated by fruit aromas peach, red fruit and flowers. Serve at 13°C, with coq au vin, game birds or poultry en sauce.
