Tom Eddy Wines Cabernet Sauvignon 1997
For starters, the dark purple color immediately hints at the levels of richness this vintage achieved. Swirl a couple of times and instantly the aromas noticeable are sweet cherry, and ripe, black raspberries. Swirl again and there is a complexity of spice, with sweet currants and cassis added to the mix. As the wine continues to develop in the glass, you will start to notice a bit of black olive, with a slight chocolate note and a very nice herbal tinge. Finally, integrated nicely into the mix is the hint of sweet, bourbon-like vanilla that tickles the back of your nose, perfectly in balance with the rich, ripe fruit. After taking a sip and rolling the wine around in your mouth, you'll notice the richness and depth of fruit seem to flood across the middle of your palate. Take another sip, and you will sense a wonderful herbal and almost mineral character in the mid-palate, revealing some of the wine's hillside terroir. Black olive, blackcurrant, and a slight hint of cocoa and vanilla nuances show as the wine slowly evolves in the glass. The finish has a velvety lushness that melds with the rich, yet elegant tannin structure, and coats the mouth with a lasting impression.
